Chicken Quesadilla

Ingredients:

4 kg apetito HFS Mexican Rice & Bean Casserole, tempered
2 kg apetito HFS Chicken Souvlaki, tempered
25 ea. 10" tortillas
800 g Tex Mex cheese shredded
  optional: salsa & sour cream for dipping

 

Preparation:

  1. Lay half the flour tortillas on a baking sheet.
  2. Layer the following ingredients in the following order on each of the tortillas:  8g cheese; 80g Mexican Bean & Rice Casserole; 40g ( #24 spoodle) Chicken Souvlaki; another 8g of cheese.
  3. Place a second tortilla on top and press down gently.
  4. Bake in oven for approx. 8 minutes, flip and bake another 8 minutes on other side or until internal temperature reaches 74C/ 165F. 
  5. Cut each quesadilla cross-wise 4 times into 8 pieces.  
  6. Serve 4 pieces with desired condiments - salsa, sour cream
