Chicken Broccoli Alfredo

Ingredients:

4 kg apetito HFS rotini noodles, cooked, thawed
4 kg alfredo sauce, prepared (or make your own homemade)
2.8 kg apetito HFS Chicken Souvlaki, thawed
2 kg broccoli cuts, frozen, thawed
  Optional toppings: parmesan cheese, black pepper

 

Preparation:

  1. Mix rotini noodles, alfredo sauce and broccoli.
  2. Place in hotel pan. Heat covered in oven to internal temperature of 74C/165F is reached.
  3. Loosen seals on corners of lids on trays and heat chicken souvlaki in oven for 40-45 min. until internal temperature of 74C/165F is reached.
  4. Serve pasta and top with chicken souvlaki. Garnish with parsley.
  5. This dish can also be plated cold and reheated on a cold plating system.
